DAH! Padma Lakshmi, a Brand Partner and Board Member, created this amazing recipe for DAH! Kulfi inspired India-Inspired Yogurt. Diwali, Deepavali or Divali is a Hindu religious festival. It is also known as Festival of Lights. It is usually celebrated during the Hindu lunisolar months of Kartika and lasts for five days. This year's Diwali celebrations will include joy, prosperity and happiness. They begin October 24, 2022.
Padma Lakshmi has just created the perfect recipe for Diwali, one the most celebrated festivals of Hinduism. Padma's Lassi Pops made from DAH! India-Style, Slow Cultured Probiotic-Rich Lassi yogurt. These delicious treats are easy to make, and great for friends and family. Layered pops are another option. Fill the wells to half full, freeze them overnight, and then add fruit, nuts, or DAH! Before freezing again, make lassi.
Padma's pops are available in Vanilla with Cardamom Lassi, Strawberry with Mint, Plain, and the award-winning Alphonso Mango. All of these flavors are available at Sprouts, as well as other retailers. Her DAH! Lassi Yogurt Pops were inspired by Malai Kulfi Ice Pops. This ice pop recipe is inspired by Malai Kulfi Ice Pops, a traditional Indian dessert that's rich in saffron and cardamom. It's also studded with pistachios.

DAH! Lassi Pop Recipe: Makes (10) 3oz. pops
(1) 32oz. (1) 32oz. Bottle of DAH! Vanilla and Cardamom Lassi
A few saffron threads
1/4 cup shelled pistachios, unsalted. You can swap out for any other nut you prefer, such as almonds, cashews or hazelnuts.
3/4 cup finely chopped strawberries. You can also swap out the strawberry for another one of your choosing, such as blueberries or raspberries, or blackberries.
Popsicle molds (we used (10) 3oz. wells)
Mortar & Pestle, or molcajete
Use a small mortar & pestle to grind the saffron threads. Add the saffron powder to the lassi glass and shake it to combine. The lassi will turn a lovely pale yellow color.
You can coarsely crush the pistachios in a mortar and pestle, or molcajete. Or you could chop them on a cutting board.
Use a small espresso spoon to add crushed pistachios into each popsicle mold. Continue with the chopped strawberries.
Slowly pour the lassi in each well. Place the popsicle sticks into each center and then transfer to the freezer. Allow it to freeze for at least one night.
- Enjoy the next day - If the popsicles don't come out of the mold immediately, heat the mold for a few seconds in hot water to loosen them.
